32 OZ. PEACHS ( SLICED AND CRUSHED ) 2-16 OZ. BAGS FROZEN
12 OZ. AMARETTO LIQUEUR
7 CUPS SUGAR
¼ CUP LEMON JUICE
2 OZ. OR 1/3 CUP PACIFIC PECTIN MIX
Cooking Instructions:
Add prepared peaches to a 6 quart pot. Add antifoam if desired. Begin heating and mix in Pacific Pectin Mix. Bring to medium boil for 30 seconds then add Liqueur. Bring back to near boil and add half the sugar. Bring back to near boil and add the last half of the sugar. Bring to full rolling boil for one minute. Let batch settle for two minutes. Skim remaining foam if necessary and then fill jars. Invert jars for 3 minutes.
Yield – 4- pints / 1 half pint
