3 oz. or ½ cup dry measure |

PROCEDURE:
1. Mix pectin, water and sodium citrate in a 4 qt. pot.
2. Mix sugar, corn syrup, flavor and color in a separate 6 qt. pot.
3. Mix citric acid and water in a small glass jar. Set a side. Note:
All acid crystals must be in solution (not visible ) prior to being
mixed in.
4. Cook both pots 8 minutes over medium heat stirring alternately.
5. Pour hot pectin solution into the pan containing the sugar and
corn syrup.
6. Boil 6 minutes more on med/high heat stirring constantly. Add
citric acid water solution boil 1 more minute, remove from heat and
pour into molds or tray.
7. When firm cut into squares. Squares may be rolled into powdered
sugar for a non stick coating.
8. If a firmer texture is desired add 2 minutes of cook time to the
final boil.
