CHERRIES JUBILEE JAM
30 oz. or 2 cans. Whole pitted dark cherries ( Canned ).
You can use fresh cherries if they have a brix of 15 to 18
Chop fine and mash or use food processor
1/3 cup Lemon juice
1/3 cup Orange juice
1/3 cup Brandy. You can replace with water for alcohol free.
½ Tea spoon cherry extract
½ Tea spoon Vanilla extract
1 Tea spoon Antifoam
49 oz. or 7 cups Sugar
2 oz. or 1/3 cup Pacific Pectin Mix.
Cooking Instructions: Add prepared fruit, juices, extracts and antifoam To 6 quart or larger pot. Heat to 160 degrees or above and add Pacific Pectin Mix. Bring to boil for 30 seconds and add brandy and half the sugar. Bring back to boil and add the remaining sugar. Bring to boil for one minute. Allow foam to settle and begin filling jars.
